Other ingredients

  • 250g plain flour, plus extra for rolling

  • 120ml ice-cold water

  • 1 pinch sea salt

  • 1/2 onion, grated

  • 1 tsp dried sage or mixed herbs

  • 1 pinch black pepper

  • 1 egg, beaten

What to do

  1. 1

Grate the frozen butter into the flour and salt. Toss with a knife.

  2. 2

Add the cold water a little at a time. Bring it into a rough dough.

  3. 3

Roll into a long strip. Fold it in three like a letter. Turn it and do it again. Do this 4 times.

  4. 4

Wrap and chill for 20 minutes.

  5. 5

Heat the oven to 210C (190C fan).

  6. 6

Mix the sausage meat, onion, herbs and pepper.

  7. 7

Roll the pastry into a long strip, 3mm thick.

  8. 8

Lay a sausage of meat down the middle. Brush one edge with egg.

  9. 9

Fold over and press with a fork. Cut into 8.

  10. 10

Brush with egg. Make 2 small cuts on top.

  11. 11

Bake for 25 to 30 minutes until deep golden.

Tip: Keep everything cold. Cold butter makes the flaky layers.

Good to know: Cook until the meat is piping hot with no pink inside.
