Other ingredients

  • 4 duck legs

  • 2 tsp Chinese five spice

  • 1 tsp sea salt

  • 6 ripe plums, stones out

  • 1 tbsp rice vinegar (plain, not seasoned)

  • 2 cloves garlic

  • 3cm fresh ginger

  • 1 cucumber, in thin sticks

  • 6 spring onions, in thin strips

What to do

  1. 1

Heat the oven to 170C (150C fan).

  2. 2

Prick the duck skin all over. Rub with five spice and salt.

  3. 3

Roast on a rack for 1 hour 45 minutes until the skin is crisp.

  4. 4

While it roasts, chop the plums. Put in a pan with the soy, vinegar, garlic and ginger.

  5. 5

Simmer for 15 to 20 minutes until thick and jammy. Blend smooth.

  6. 6

Shred the duck with 2 forks.

  7. 7

Spread plum sauce on a wrap. Add duck, cucumber and spring onion. Roll up.

Tip: Ripe plums are sweet enough on their own. Taste and add a splash more vinegar if you like it sharper.
