Jacket potato with tuna and sweetcorn

1 small tin (110g drained) tuna in spring water
1 tbsp olive oil mayonnaise
1 tbsp Greek yoghurt
Other ingredients
1 large (300g) baking potato
3 tbsp sweetcorn
1 spring onion, sliced
handful rocket
1 pinch black pepper
What to do

Prick the potato. Microwave for 8 to 10 minutes until soft. Turn halfway.

Mix the tuna, mayo, yoghurt, sweetcorn and spring onion.

Split the potato. Fill with tuna.

Add pepper. Serve with rocket.
Tip: For crispy skin, put it in a hot oven for 10 minutes after.
